Cooking omena is not a mean feat,it requires expertize,which many of us lack.It’s possible to cook omena without the irritating smell.
The other day we featured the health benefits of eating Omena and asked you to check out with Venasnews on how to cook the same. Many of our readers have asked us to rewrite the procedure of cooking omena-which is not available online.
Here it is;
Your ingredients will be
- Omena
- Tomatoes (just enough)
- Vegetable oil
- Onions
- Garlic
- A cup of water or milk cream(your choice)
- Salt
- Green pepper (pilipili hoho)
- Coriander leaves(dhania)
Some of the above ingredients may be optional (hoho, garlic)
Procedure
- First you have to select your omena by removing dirt, loose scales and chaff
- Put the omena in a bowl the pour hot boiling water over it. You may do it thrice so as to eliminate the bitter taste and odour
- Cover the bowl containing washed omena with a dish cloth and strain the water completely.
- Put the omena in a source pan and place it over a low heat point to ensure the water dries out completely.
- Deep you tomatoes in hot water then peel them and mash them to create tomato puree. You can blend them if you have a blender.
- Put vegetable oil in the sufuria and let it heat till it smokes
- Put your Omena and stir them till it turns golden brown and crunchy. Cook them under low heat.
- Add onions and garlic and let cook for five minutes while stirring.
- Add tomatoes and continue stirring till it forms a thick paste. You can then add salt to taste and the green pepper (hoho) plus any other spices of your choice e.g the coriander leaves (dhania) and /or Royco cubes (smashed) then cook for about 2 minutes.
- At this point you can add the 1 cup of water or the cream, whichever you prefer but not both.
- Reduce the heat to low and allow the omena to cook for another 3 minutes and it will be ready .You can serve the tasty omena with green vegetables and ugali or rice. Don’t forget to thank us later!
