How to Cook Pilau

Even without formal skills, you can cook pilau using the following simple procedure. Here is our simplified recipe.

INGREDIENTS

  • 1 Large Onion [diced]
  • 2 carrots cubed
  • 3 cups of rice[ long grain/basmati/Pishori
  • 1 cup green peas [optional]
  • 1 large green pepper [Pilipili hoho] chopped
  • A quarter kilogram of beef or chicken.
  • 1 medium sized garlic pounded.
  • Tomato paste
  • Grounded pilau masala
  • Cooking oil [salad]
  • Salt to taste.

HOW TO MAKE THE PILAU

  1. Take your pan and heat oil, add the chopped ginger and stir until golden brown. Add in the meat or chicken and stir continuously add salt and cover. Let the meat cook under low heat to preserve the flavor add water and let it cook till tender.
  2. Take a large cooking sufuria and heat some oil. Add your onions and fry until they turn a little brown and in the pounded ginger and the garlic mixture and stir until the garlic start turning golden brown.
  3. Put in the green pepper [pili pili hoho] the carrots and the boiled green peas [optional]
  4. Add the tomato paste into the mixture and mix with a spoon to dissolve the paste.
  5. Add 4 tablespoonful of Pilau masala into the mixture.
  6. Add the meat, salt to taste and some little water and cover the pan let the meat cook for 3 minutes
  7. Once the meat has absorbed all the spices add in your rice [washed well] mix well till the rice turns brown. Then add enough hot water
  8. Cover the sufuria and let your pilau cook under very low heat until all the water has evaporated, ensure you check and stir in frequently to prevent the rice from sticking on the sufuria and at the bottom. Also keep regulating the heat to ensure your pilau doesn’t burn.
  9. Once ready remove and cover with a khaki paper to help it dry. You can serve it with kachumbari or any other stew according to preference.
